JOB DESCRIPTION

Responsible for ensuring that all salad bar ingredients are complete and properly prepared according to the standards of food quality and safety.

KEY AREAS OF RESPONSIBILITY

1. Food Preparation & Storage

a. Prepare all ingredients for the day. Take instructions from the MTM on duty prior to

preparations.

b. Thoroughly wash and clean fresh ingredients prior chopping/cutting of ingredients.

c. Check the stocks from the previous day and check for quality and freshness.

d. Label all goods. Use the DayDots for prepared/back-up items.

e. Monitor and replenish items diligently especially during lunch or peak periods.

f. Organize stocks and ensure that FIFO procedure is followed.

g. Monitor the standard temperatures of the cold storages.

h. Weigh and record individual ingredients for wastage tracking.

i. Make the inventory of all the ingredients.

2. Cleanliness and Sanitation

a. Follow proper standards and procedures in preparation of food ingredients.

b. Check the preparation/kitchen stations. Help maintain the cleanliness of the area and in

maintaining the floor dry.

c. Help in collecting tongs and bowls from the salad bar; and in bringing them back to the

salad bar after washing.

d. Keep all the kitchen cold storages clean, sanitized, and organized.
